Bakeware: the buying guide
Measure your OTG cavity before buying: a 7 or 8 inch round tin fits most 25 to 35 litre ovens. Carbon steel with a non-stick coating is the everyday standard; aluminium bakes evenly and lasts; silicone is flexible and safe to 230 degrees. Look for "oven safe" temperature ratings. Spring-form pans are for cheesecakes and delicate sponges. Buy a cooling rack; cakes left in the tin go soggy.
